Chicken Salad
Mix Together:
6 Cups Shredded Chicken
1 Cup Finely Diced Celery
½ Cup Chopped Yellow Onion
2 Cup Chopped Apple with Skin
1 Cup Toasted Slivered Almonds
Dressing:
1 ½ Cup Mayonnaise (light)
2 TB Honey
1 tsp. Salt
½ tsp. Pepper
Stir together, add a little chicken broth or milk to make smooth if needed.
Pour Dressing over salad and stir till everything is coated. Should make enough for 16 croissant sandwiches using rounded 2/3 Cup each.
